Our Red Flint Corn is a unique variety which has a yellow starchy interior endosperm, and a deep purplish red exterior, or pericarp. When ground, the result is a yellow cornmeal or polenta with red flecks, which adds visual interest and flavor. This corn has a deep savory flavor and a sturdy mouthfeel. Pairs well with fruity olive oils, roasted vegetables, or braised meats.

All of our stone ground corn is Open Pollinated, which means it is naturally pollinated by the wind. This allows us to save our seeds and improve our own farm’s variety year over year by selecting for preferred features like flavor, texture, kernel hardness, and plant health.

Red Corn Flour is a silky soft, very fine flour with a pale pink color. Use it in cakes, cookies, pastries, pancakes, and more. 

Whole Grain Cornmeal is a beautiful blend of yellow and red tones, perfect for making cornbread, adding to pancakes, and other baked goods. 

Polenta is a finely ground corn, with the flour removed. Cooks up into a complex porridge. Nominated for the 2023 Good Food Awards!

Coarse Polenta is ideal for chunky Southern style corn porridge, or as a grain soaker for bread baking.

Whole Kernels are great for home milling and nixtamalization.

All of our flours are stone milled which preserves the rich flavor and nutritional value of the grain. Best within 6 months - refrigerate or freeze for longer storage.
