Our online store is always open! We can ship anywhere in the US. Our products are available in Madison area grocery stores like Willy St. Co-op and Metcalfe’s Market. Check out the Store Finder for a list of retailers, along with cafes and bakeries that use our grains.

What is bolted flour?

“Bolted” refers to the sifting process after flour has been stone milled. This removes the largest bran particles and creates a product that is closer to a “white” flour. You are still getting all of the naturally occurring vitamins and minerals that are present in the grain’s germ and endosperm, but a smaller portion of fiber. Bolted flour is often considered to be easier to bake bread with because there are fewer large bran particles to disrupt gluten development. We recommend using bolted flours when you are looking for a more open crumb or lighter end product.
