Rye is a hearty cereal grain used extensively in the baking of northern and eastern Europe. Use it on its own for a dense, flavorful bread, or blend with our AP or Bread flours for pastries, pizza dough, and sourdough breads.

 

Suggested Recipe:

 

Rye Flour Brownies

  • 11 Tbs unsalted butter, cut into ½ inch cubes
  • 10 ½ oz bittersweet chocolate, chopped
  • 1 ½ cup whole grain rye flour
  • ½ cp unsweetened Dutch-process cocoa powder
  • ½ tsp baking powder
  • 1 tsp fine sea salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon flaky sea salt for sprinkling on top

 

Melt butter and chocolate over a double boiler, stirring occasionally. Let cool. Combine rye flour, cocoa, baking powder and salt. In a separate bowl beat eggs, sugars, and vanilla until light and fluffy. Beat in melted chocolate mixture until smooth. Mix in flour mixture. Pour batter into a buttered 9×13 pan and smooth the top. Sprinkle with flaky salt and bake in a 350 degree oven for 25 minutes or until brownies have just a slight wobble at the center. Let cool completely before serving.
